When she took Phentermine in 2016, one thing she mentioned was that she was told that it would give her energy, but it didn't, and she was told back then that that could mean she has ADHD. Adderall won't do anything for her weight for the same reason Phentermine didn't: she doesn't eat for hunger, and she will power through the lack of appetite.

Amber needs to take her meds consistently and practice 'mental health hygiene' and eat better.

Medication is not a cure it is there to give you a foothold so that you are able to take control of the worst of your symptoms and go to therapy so that you can apply the things you learn with something like CBT or CAT. If she went to a therapist she would know this.

She switches therapists because they tell her that she has to do the work and that they can't wave a magic wand

She clearly has a personality disorder that needs intensive and sometime very distressing therapy where you have to face up to some horrible truths about yourself - there is no way she will do this right now
