I see it as anything that potentially ruins the fun. To me, even letting the cow know we exist damages some of the organic fun. Very few cows are content to graze along knowing we exist like OPL.
In my case I know a few people in publishing, the next industry Russell Greer is gunning for. I could put out a warning and probably get it picked up enough that most doors would be closed before he even laid his drooling face upon them.
But that would ruin the fun.
As none of those people would ever meet Russ in RL, they're in no danger. They might get harassed but that's already a danger in the industry and plenty of publishing employees and authors have been harrassed before. They know how to handle it.
So unless someone is in real danger, I don't see the need to ween.

I'd consider weeening any active attempt to troll.
Trolling is overrated and most people are shit at it. I don't make a distinction between weeening and trolling because there really isn't any. Look at any good personality we'd consider a troll and how they get their reactions, a good recent example being Mister Metokur catching Jonathan Ross on that livestream. Metokur was just himself, asking questions and not really trying to get a rise out of anyone. It happened naturally.
If you go in with some big plan expecting to get some hilarious reaction, it won't work. More than likely, you'll become the target because most would-be trolls are themselves cows.

Fucking with lolcows is a huge risk, because you may end up looking worse than them.

If you're caught or you reveal yourself as having gained a piss poor response by your trolling it's weening as well. Good trolls usually fuck with Chris creatively and you don't even know they're doing it. Stephanie Bustcakes for example is hilarious that Chris called himself that, but less so when you find out it was just someone saying, "Hey Chris, you should become a prostitute called Stephanie Bustcakes."

This is why A-Logging is so lame, although Michael Hirtes is the current owner of the A-Log crown.
Somehow, despite him being an absolute joke a dozen times more pathetic than Chris, he continues to think that repeatedly being angry at Chris is "trolling" even though Chris basically completely ignores him as beneath notice. Effectively, he's being trolled by Chris who is putting no effort into it at all while Hirtes is trying really, really hard.

Any sort of comment directed directly at a lolcow (especially Chris) with the sole intention of insulting them is weening. This includes "JULAAAY", still calling Chris "Ian Brandon Anderson", telling Jace when we thought he was real that he had a lazy eye, or saying he drank wolf cum. Trolling is like an autistic game of cat and mouse. You do what you do to get some sort of reaction. It could be rage, smugness, or making them say/reveal something funny, whatever so long as it makes them actually react.
In terms of Chris trolling Clyde Cash was funny (even though he seemed very hostile) because he always got a rise out of Chris. He didn't just call Chris a fat autistic faggot with shitty OCs. Weening would've gotten results like 9 years ago when Chris was less paranoid and responded to things like the mailbags and IRC/mumble chats, but because Chris doesn't bite anymore it just makes you look like a tryhard idiot. Even the fake CWC Adult Chronicles creator troll was successful (And funny imo) because it produced results and got Chris both hilariously mad and got the apology letter video where Chris was clearly insulted but it went over his head.
The only time weening is "funny" is when a new lolcow comes to the forums, or the lolcow hasn't been massively trolled yet so they're easy to get a rise out of. Even then you can't be too malicious.
