If there is no contact between the two species then the only real reason for war is one species having what someone else wants. The idea of a space crusade works well in fiction but in reality it's ridiculous. What would be next, killing every biological organism in the universe for the risk that they'll rapidly evolve overnight?

Sure. Why not? Think for a moment. Instead of your intelligent species being one that evolved (like humans) to be an Apex predator using intelligence instead developed sentience solely as a self defense mechanism. You are an obligate herbivore. You don't kill for food. You kill to survive. You have an herbivores ingrained evolutionary fear responses and herd instincts. You respond to the presence of carnivores and omnivores not with understanding but immediate and unrestrained violence.

Humans, being omnivores with canines and penchant for eating meat would be an existential threat to an obligate herbivore species. Such that they may not even consider the possibility of dialogue and instead resort to preemptive attack. Add in a religious layer to a herbivore society, where the eating of meat is a strict social taboo and you have even more justification for a religious crusade absent any other economic concerns.

personally I like the idea in "Pluribus" more, that any sufficiently advanced species would simply hit the universe with some kind of psychic weapon rather than physically colonizing planets

once you've colonized a whole galaxy or whatever it doesn't really matter. if you're not having 40k style forever-wars, oneshotting everything with a spinal-cord that exists outside your perimeter is kind of a no-brainer.
just like hit 'em with a psychic-weapon(which would be trivial for your race to develop) and make sure they never get on your level to begin with.

I have a hypothesis, fittingly enough for this, that the Fermi Paradox is caused by "Space China."
Based on the historical experience of hegemonic empires developing structural barriers to exploration, when an alien civilization politically unifies it also begins a deep sakoku/hermit kingdom-like stagnation that guarantees it will never walk among the stars.
