I suggest using PaperMC as the server program. It's an improved version of Spigot with many bug fixes. You could install a few plugins to moderate and protect the server if that's what you're looking for.
 
I know a guy with very POWERFUL Minecraft autism, I'll get him on.

Java is Minecraft for PC, and the original Minecraft. Bedrock started out as the mobile version of Minecraft, but Microsoft has been trying to push it as the 'true' Minecraft and has multi platform support (PC, Android, iOS, Switch...)

Java is the one you want to go with, grab a version of Spigot or Paper and you will be set. Offers plenty of custamization and a Vanilla experience, and you have a whole bunch of plugins to choose from

Bedrock is good for singleplayer but multiplayer is shit. You are stuck using Mojangs realms system (which you have to pay monthly for and requires and Xbox Live account to play on, and supports 10 players maximum). And if you do want to host your own server using their crappy buggy beta server software, only people playing on PC or Android will be able to connect since some of the console versions of the Bedrock Minecraft will only let you connect to 'official' servers.
 
Nool if you spend your time writing custom Minecraft PvP software, you can easily milk kids for very large sums of money each months. I've been a developer on several Minecraft "hunger games" servers pulling in over 40.000 USD a month.

I don't understand why you pour so much effort into things that are so hard to monetize.

Based. I'm tired of shitty SMP servers where you can't even chop some trees or scavenge abandoned bases because a guy who hasn't logged in since 2012 abused anti-griefing plugins to claim as much shit as possible.
Will it be a cracked server so that pirated client players can play too?
