2 cups shredded cheese (use your discretion as to the type here, something semi-firm)
1 cup buttermilk OR 1 cup whole milk mixed with one tablespoon of vinegar and left to sit for ten minutes
3/4 cup melted butter
chopped fresh parsley
Preheat oven to 450F. Prepare a greased and lightly floured baking sheet.
Mix all the dry ingredients and the shredded cheese together.
Add the milk and 1/2 cup of butter. Mix it into a dough, then knead it by hand until it is a good consistency. Do not over-knead it. Also work quickly because the baking powder is reacting at this point.
Portion out evenly-sized globs of dough and spread them out on the sheet, not touching. Remember they will expand some.
Bake for 10-12 minutes or until nicely golden brown.
Remove from oven, baste with remaining butter, sprinkle with chopped parsley. Optionally dust them with a little more Old Bay before sprinkling on the parsley.
This should make about a dozen little cheesy biscuits.
