Without any additional information I'm going to assume you are using a shitty nonstick pan on an electric stove.
Based on these assumptions Im going to assume you aren't preseasoning the pan and you are setting the heat too high for too long.
For omelettes you want a medium heat, after warming the pan. You know the pan is warm when the pat of butter you use to season the pan is just about to burn. This is really hard to do on electric because electric stoves suck. Pour your eggs in and reduce height to medium. Sprinkle your mixings after pour. Let it sit until the edges are firm and then fold. If you need it up at least you have scrambled eggs
If you use a high smoke point oil, instead of lame-ass butter, you can get the oil nice and hot and when it's hot enough that a tiny spritz of water off your fingers sizzles in the oil, you can cook an egg or an omelet fast AF without burning it.
