You are very unlikely to actually see the missile that the Iron Dome interceptor is targeting, especially because Hamas usually attacks at night. What you see are the interceptors themselves, then they usually but not always "vanish" as the engine shuts off, followed by a small explosion upon reaching the incoming missile which doesn't need much to be disabled or otherwise rendered useless.
Many of the rockets being fired are on the simpler side ("simple" being a relative term in this case) and consist of MLRS (multiple launch rocket systems) that are mounted on trucks or retrofitted in some fashion to be fired from concealed positions. These rockets can contain GPS tracking or heat seeking abilities, though many seem to be pointed in Israel's general direction and wherever they land, they land. Additionally, if some reports are to be believed, some of the missiles being fired are short and medium range ballistic missiles (thanks Iran) which would be out of their burn phase by the time Iron Dome kicks in to intercept, so you would see no trail.
