A couple of things:
All of the scholarly sources about the history of queer theory I found didn't even mention Rubin's "Thinking Sex," much less describe it as a founding document. Rubin and her spouse's contributions (which are controversial and not universally accepted on account of the things you mentioned) aren't representative of all of queer theory. There is still unfortunately a minority of academics that defend her, though, which is another reason it shouldn't be taught at universities-- you might end up with a fringe professor who supports Rubin's crap including it in a curriculum.
The idea that gay people are disproportionately likely to be pedophiles is absurd and has been debunked many times. Pedophilia is a paraphilia-- pedophiles often don't care about gender, since it's just children in general they want to prey on. The vast, vast majority of pedophiles are males with adult female partners, and over two-thirds of CSA survivors are girls. The theory that the gay rights movement expunged itself of pedophiles because of respectability politics is literally the exact same argument pedophiles themselves have made. Have you ever considered that it's actually because everybody, not just gay people, began cracking down on pedophiles more seriously in the seventies and eighties? CAPTA was enacted in 1974, for instance, and studies on child abuse really didn't begin in earnest until the late sixties. As bizarre as it seems today, no one-- straight or gay-- gave a fuck about CSA before the sixties.
Also note how most the people seeking to troon kids are AGPs asshurt that they didn't experience a "female childhood." AGPs (transbians) are straight men, and often seek out adult female partners (with limited success lol.) The desire to transition children is a very recent thing, and though I acknowledge correlation does not equal causation, I don't think it's a coincidence that the influx of AGPs and the increase in popularity of kid-trooning happened at the same time. This is because the mid 2000s marked the beginning of the commodification of gayness-- both in argumentation and in mass media. I blame this partially on the retarded idea on the left that the more oppressed someone is the more correct they must be.
I reiterate: most practitioners of queer theory today would just describe it as media analysis and don't even know about Rubin's work, much less endorse it.
Fight the real enemy: the people turning identity-based oppression into a trend. There wouldn't be so many AGP creeps in the LGB community today if it weren't for the SJWs ten years ago who squawked about how horrible and uncool white straight men are. They conflated oppression with righteousness, so straight men found a way to make themselves oppressed, while also retaining all their creepy, pedophilic tendencies.
