I would go for a proper beef bone stock and/or mole - the only thing I really like in Mexican food - to bind it, it looks a little runny and the fat is all loose, but not a bad stew. Did you brown the meat properly before adding the liquid? The curdled proteins in the sauce looks like you boiled the meat straight from cold and/or the stew boiled too hard.
I seldom use dark chocolate in very meaty dark stews because of how much like mole and the shine it gives to sauces.
