I think the reason why Dobson is so into children's media is because of his fear of growing up. As much as he tries to come across as a learned professional, the man still wants to be treated with kids' gloves with nearly everything he does. It's what makes him such an enjoyable/frustrating cow. He wants praise for whatever he does, not bothering to put in the time and effort others do for their recognition.
Part of me actually wonders if he thinks having a child-like mindset would give him an edge in an industry geared toward kids. After all, isn't that what happens in 90's movies all the time? The manchild who is supposed to be lovable is able to make it big because he can think outside of the box, unlike all the square adults Daddy-o. Ya dig me homeslice? It wouldn't surprise me if Dobson subconsciously attempts to emulate such behavior, thinking it'll work in the real world.
Now as it stands, Dobson tends to shy away from media targeted towards older viewers. Shows that deal with consequences, character flaws, questions on morality, or complex stories. Not just tits, blood and vulgarity like Grumpy tries to paint it as. More mature themes, in the best meaning of the word to a much harsher degree than his childish media diet. Stuff that appeals to adults rather than kids. Stuff closer to reality, when he just wants to play on easy mode.
Does Dobson even get the idea that different people have different tastes? Not sure sometimes.
As for Rick, Dobson is an admitted fan of works like Ranma 1/2. Those old shows/manga pretty much run on the characters being assholes to each other for comic effect. And as we've long established with violence and Link's refusal to understand "no means no", it's okay in Dobson's book if it's meant to be funny.
