I think part of it has to do with him only wanting to work as much as possible - he clearly hates his self-employed job.

Him keeping a rigid schedule is all part of him trying to maintain the "I'm a grown adult with a real job," thing going. If he stopped doing it...

I feel like he has made mention, or even shown off a whiteboard with the schedule for his specific dinners for the week also.
