This annoys the shit out of me too because I'm someone who writes a lot of run-on sentences and likes to divvy them up with dashes and semicolons...

It's probably just a quick and lazy watermark from them to indicate when text is GPT generated.

Because em/en dashes are used a lot in actual scientific papers. Which is one of the main sources for training data. And also, the people dealing...

for that specific example it's probably trained on so much literature that happened to use em dashes it's tricked into using them in everything...

Because it's the most versatile and useful piece of punctuation in anyone's writing kit—if anything it's underutilized by non-robotic writers.
