I am not a chef. I have no formal training in anything other than pouring cereal, and even that's a stretch. I can read a recipe, I can dabble with ingredients and spices (custom, home made!), but I'm not like my dad who could more than likely go on that food network show "Chopped" and do really well. I asked him (who actually IS Italian) what he'd accomplish by doing it that way. His response? "Wasting his fuckin time." Even with the sauce recipe I use, the largest time sink is the roasting of the tomatoes and the subsequent reduction of the puree and wine. It's not this day long bullshit endeavor, with enough sugar to send average mortals into a diabetic coma.
