I just read about this in a different book. tl;dr, you know that famous experiment where rats/mice in a lab environment will press a lever to receive cocaine and they'll do nothing but that until they die of starvation or exhaustion, well it turns out that behavior goes away when you take the mouse out of a sterile cage and put it in something closer to its natural habitat with ample space. Despite having access to the coke lever, they stop caring about it once their other needs are fulfilled. The same is true of pigeons that prefer a random payout of food versus a consistent payout, aka gambling; the preference flips once they have ample space and shit to do despite the option remaining.

You can draw your own conclusions from that. Proposed explanations range from scarcity to stress to boredom. I'd argue that it doesn't really matter at that granular a level, holistically the bottom line is that living in a little sterile cube isolated from your natural environment fucks you up and should be avoided.
