I'm guessing maybe she got moisture in the pan? If you overcrowd your pan, or don't heat it up enough, or fuck up the marinade somehow, you'll end up steaming your chicken. Like if you throw a bunch of vegetables with your chicken in a tepid pan, the water from the vegetables will render it and steam your chicken. Maybe she cooked the eggplants with the chicken?
